Egg Drop Soup
Ingredients
- 3 cups chicken broth
- 1 medium green onion / scallion - trimmed and sliced
- 1 teaspoon salt (kosher or sea)
- 1 pinch ground pepper
- 2 eggs - slightly beaten
- soy sauce to taste
Directions
- Heat chicken broth, salt, and (white if possible) pepper to boiling in 2 quart saucepan.
- Stir green onions into eggs.
- Pour egg mixture slowly into boiling broth, stirring constantly with fork to form wisps of egg.
